I hold Café Mám close to my heart as I used to own a Café in Oregon, where their Headquarters are located, and I was fortunate to brew their amazing coffee every day. Their coffee is grown by Organic fair-trade cooperatives by native Mayan farmers residing in the montañas of Chiapas, Mexico. The name Mám is named after the growers, which are people of the Café Mám, Tzetzal and Mocho (also the name of my favorite blend), which are organized with democratic ideals that realize the importance of working hard, being and working as a cooperative and working together to create the highest standards. They really are the essence of Sustainability, adhering to a strict program that encourages growth by composting, terracing and regenerative pruning, and ensuring the customer by having a ‘audit trail’ which ensures you and I that their product does not ever come in to contact with any pesticides or chemicals during the growing, cleaning, drying, milling, bagging, transporting, shipping, importing, inspections, warehousing, roasting or packaging process. Additionally, Café Mám puts their natural coffee in recyclable bags, a natural Kraft bag lined with glassine, making it easily recyclable as kraft paper or cardboard, and they use recycled, unbleached boxes and paper. And Cafe Mam even donates money to pesticide reform to get rid of toxic chemicals used in coffee farming!
In addition to their Sustainability, Café Máms coffee is certified 100% Organic by one of the most thorough credible Organic Certifiers around, the Oregon Tilth! Because of this, they must also plant leguminous shade trees and establish a seedling nursery before their harvest is classified as Organic, which is good for the environment and for the biodiversity of the indigenous plants and animals. Most importantly, they make amazing coffee. All of their roasts are fresh roasted to order and are available in regular or Swiss-processed decaf (The Swiss Water decaffeination is a chemical free process using water instead. This is a certified Organic process using Café Mam beans, leaving the roast of the decaffeinated beans slightly darker than regular beans, but retaining the superb taste that their regular beans have). Café Mam brings a variety of natural coffee roasts, natural coffee blends, and natural coffee grinds to the cup. My favorites are:
Mochó blend, which is a three to two blend of Medium and Italian. It is a bit fruity with a good complex body and an aromatic almost cleansing aftertast. Mochó is excellent served with all types of food, my favorite is a nice scone or croissant.
Italian is their original roast; It is rich and dark in flavor with a bold, complete taste, the ultimate cup of wake up morning coffee (this is my husbands favorite, and he only likes strong and beautiful).
Tango blend, is an equal combination of French and Italian. Tango blends a slightly smoky finish from the French with the full-bodied boldness of the Italian. As the Café Mam people say “it takes two to Tango” and this blend really shows you why!
